Why give up chocolate?????this is amazing and
healthy!!!
Chocolate
1 cup coconut oil, melted
1/2 cup cocoa
1/2 cup xylitol, ground or stevia to taste
1 tsp Stevia Extract Powder
dash salt
1/2 tsp vanilla
Mix well and pour a little amount into chocolate
molds. Let harden. Add 3/4 tsp filling onto each hardened mold and cover with
remaining chocolate. Refrigerate to harden.
Filling>>
1/2 cup cream cheese, room temperature
1/2 cup peanut butter
2 tsp Stevia Extract Powder
1 tsp vanilla
Mix well.

Strawberry
Cheesecake Delight
Yield:
8 servings
12 oz
lite whipped topping, thawed
1 sm
pkg sugar /fat free cheesecake pudding mix (dry)
18 oz
strawberry yogurt
16 oz
(1 lb) strawberries, fresh or frozen, sliced
2-3
bananas, sliced (only add before serving)
Opt:
mini marshmallows (also add before serving)
Stir
topping, yogurt and pudding together in a large bowl. Cover and put in
refrigerator for 1 hour. Add berries, bananas and marshmallows (if using) and
fold gently. Serve with sprinkling of crunchy granola or chopped, roasted nuts.

Tropical Twinkie Trifle *NO BAKE!!
WARNING IF YOU ARE ON A "DIET" LOOK
AWAY...MODERATION!
Ingredients:
1 - 20 oz can Crushed Pineapple (drained)
1 box (10 cakes) - "Twinkies" snack
cakes
2 boxes (3.4 oz) Instant Banana Pudding
1 can (21 oz) Strawberry Pie Filling
3 ripe bananas , cut to your liking
1 - 8oz container Cool Whip (or whipping cream)
Toasted Coconut (optional)
Chocolate syrup (optional)
Chopped Nuts of your choice(optional)
Maraschino Cherries (optional)
This recipe filled 2 loaf pans (9 x 5 1/2)
Directions:
Pour drained pineapple in bottom of pans, next
place the Twinkies on top. Prepare the Banana Pudding as directed on box,
then pour over layers. Pour Strawberry Pie Filling for next layer,
followed by cut bananas. Spread container of Cool Whip next or you can
use Whipping Cream. Top with optional toasted coconut, drizzle
chocolate syrup, then sprinkle with chopped pecans. Place Maraschino Cherries
on very top.
Enjoy! Watch your portions! This is a great one
to make for that special company!

Guilt Free Cookie Dough
If you are a cookie dough addict like me, then you will
LOVE this recipe!
1 cup vanilla flavored Greek yogurt
1/2 cup peanut butter
(I used smooth but could
use crunchy too)
1 tsp vanilla extract
sweeten to taste using sugar or sweetener
(I
recommend Stevia)
1/4 cup mini chocolate chips
(reserve a small
amount for garnish)
Mix all ingredients in a bowl, top with
remaining chocolate chips and enjoy! Could be eaten as is, or used as a fruit
dip!
Alternatively, place in the freezer for about an
hour and enjoy as ice cream!

Overnight Chia Pudding
GREAT way to start the day!!!
Ingredients:
2 cup unsweetened almond/coconut milk beverage
(used Almond Breeze)
1/2 cup fresh blueberries, blackberries or
raspberries
1/2 cup chia seeds
2 Tbsp stevia (or sugar/honey to taste)
1 tsp vanilla
Directions:
Mix everything in a mason jar. Shake well and
place in the fridge. Shake again after half an hour. Refrigerate overnight or
at least 6 hours. Garnish with berries before serving.

EASY PEACH/CHERRY COBBLER
2 CUPS SELF RISING FLOUR
2 CUPS SUGAR OR SPLENDA
2 CUPS MILK
2 STICKS BUTTER MELTED
1 LRG CAN PEACHES DRAINED AND 1 LRG CAN CHERRY
PIE FILLING
MIX
FIRST 4 INGREDIENTS POUR INTO GREASED 9X13 BAKING DISH, PLACE PEACHES CHERRIES
OR FRUIT OF YOUR CHOICE ON TOP AND BAKE AT 350 FOR 1 HOUR ON THE LOWEST RACK IN
OVEN.

CHOCOLATE COBBLER
2 sticks butter
1 1/4 c sugar
1 1/2 c self rising flour
1 tsp vanilla
3/4 c milk
CHOCOLATE LAYER
1 C sugar
6 Tbsp cocoa powder
2 C boiling water
Preheat oven to 350. In a 9x13 pan, melt the two
sticks of butter in the oven.
Preheat oven to 350. In a 9x13 glass baking
dish, melt the two sticks of butter in the oven.
Meanwhile in a bowl, mix together the 1 1/4cups
of sugar, flour, vanilla and milk. Once the butter is melted pour the batter
over the butter, do not stir.
In a separate bowl mix together the cocoa and
remaining sugar.
Sprinkle cocoa/sugar mixture on top of batter.
Do not stir.
Pour the 2 cups of boiling water on top of that
do not stir and bake for 30-45 minutes. Keep an eye on it after 30 minutes
though it will brown quickly. Usually takes 35minutes...enjoy

Peanut Butter Protein Pudding
SO fast, filling and so yummy!!!!
1/2 cup greek yogurt
2 Tbsp peanut butter
1 1/2 Tbsp stevia or to taste
1/2 tsp vanilla
2 Tbsp sugar free dark chocolate
Mix first 4 ingredients well. Stir in dark chocolate. Enjoy
Ps. Stick it in the freezer for a little to make ice cream!!!

COCONUT CAKE
OMYGOODNESS - TO DIE FOR!
Cake Ingredients
1 Box White Cake Mix
1 Can Coconut Milk (set 4-5 Tbsp aside for icing)
3 Eggs
2 Tbsp Coconut Oil (melted)
1 Tsp Coconut Flavoring
Directions
In a medium bowl, combine all of the above ingredients and blend
until smooth. Place batter in lined cupcake tin about 3/4 full. Bake in a 350
degree oven for approximately 15 - 20 minutes. Remove from oven and cool completely before frosting.
FROSTING
Frosting Ingredients
1 Cup Butter
3 Tsp Coconut Flavoring
4 Cups Icing Sugar (powdered sugar)
4-5 Tbsp Coconut Milk (reserved from cake ingredients)
Directions
Combine all frosting ingredients and mix on medium until super
smooth and creamy. You can add a little more coconut milk if frosting is too
stiff.
Optional - sprinkle with coconut flakes for a pretty touch!

Cheesecake
Stuffed Strawberries
Ingredients
1 lb
large strawberries
8 oz.
cream cheese, softened (can use 1/3 less fat)
3-4
tbsp powdered sugar (4 tbsp for a sweeter filling)
1 tsp
vanilla extract
graham
cracker crumbs
Directions
1.
Rinse strawberries and cut around the top of the strawberry. Remove the top and
clean out with a paring knife, if necessary (some may already be hollow
inside). Prep all strawberries and set aside.
2. In a
mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy. Add
cream cheese mix to a piping bag or Ziploc with the corner snipped off. Fill
strawberries with cheesecake mixture. Once strawberries are filled, dip the top
in graham cracker crumbs. If not serving immediately, refrigerate until
serving.

Cookie Cup for Ice Cream Sundaes
Put the chocolate chip cookie dough on the
outside of a cupcake pan lined with a cupcake liner and make cookie bowls. Make
sure you don't put too much cookie dough on, or it will spread out. Just enough
to cover the cupcake liner.
Bake at 350 F till golden, about 12 minutes. Let
cool before removing from pan. Once they are baked... you can put Ice Cream
inside of them and top off with your favorite toppings!!!

Nutella Muffins
Makes 12
1 Cup Nutella
8 Tbs SR Flour
2 Eggs
Mix all ingredients in a bowl. Place in muffin tray, and bake at
350 degrees for 15 mins. Allow to cool, and Enjoy.

Good Time Lemon Bars!
May not be the healthiest but I made them today for my kids...they were a hit! Defiantly a once in a while type of dessert! A very easy lemon bar…perfect for a hot summer day!
Ingredients
1 cup All-Purpose Flour
1 stick of Butter – softened
¼ cup Confectioner Sugar
1 cup White Sugar
½ tsp Baking Powder
2 Tbsp Lemon Juice
2 Eggs – eaten
2-4 Tbsp Powder Sugar for sprinkling over baked bars
Instructions

Oatmeal Chocolate Peanut Butter
No-Bake Candy
**these are a healthier version snack and to die for!!**
1 cup peanut butter
2/3 cup honey
1/2 cup coconut oil (no substitutes, this is what gives its creamy texture and flavor)
2 cups oats (not instant)
1 1/4 cups mini chocolate chips
3/4 cup dried cranberries
In a medium sized saucepan, melt together peanut butter, honey and coconut oil. Remove from heat and add oats, chocolate chips and dried cranberries. Stir until combined and chocolate chips are melted.
Spread into a 9x13 pan. Refrigerate until hardened, about an hour. Store in refrigerator...

Homemade Reese Bars
1 cup sweet butter
2 cups creamy peanut butter
1 ¼ cup graham cracker crumbs ...
1 lb. powdered sugar
6 oz. pkg chocolate morsels
In saucepan melt butter and peanut butter together. Once melted, add graham cracker crumbs and sugar and mix until well blended. Press into a 9x13 baking dish.
Melt chocolate morsels and spread over mixture in pan. Refrigerate for 20 minutes until chocolate has hardened cut.

Apple Goodness
Ingredients
2 sticks butter
1 1/2 tsp. vanilla
1 cups sugar
2 tubes crescent rolls
2 granny smith apples
12 ounces of Mountain Dew
Cinnamon
Vanilla ice cream
Instructions
Peel and slice your apples in to 16 wedges.
Wrap each slice in a crescent dough triangle and place in sprayed
(greased) pan.
In a bowl, melt your butter and stir in sugar and vanilla.
Pour over top of the wrapped apples.
Pour the Mt. Dew all around and sprinkle with Cinnamon.
Place in 350 degree oven for 30 to 40 minutes. Serve hot with ice
cream!

Pumpkin Cake
Ingredients
1 box yellow cake mix
14 oz pumpkin puree (NOT PUMPKIN PIE FILLING)
14 oz. can sweetened condensed milk
8 oz. tub cool whip
1/2 bag Heath Bits(Optional)
Caramel Sundae Sauce (optional)
Instructions
Mix together the cake mix, the pumpkin puree
until a batter forms. Using the 14 oz. can of pumpkin puree will yield a
thicker batter. You can add up to 1 cup more pumpkin if you'd like a thinner
batter (which will yield a slightly fluffier cake).
Pour batter into a well greased 9x9 (9x13 if you
added more pumpkin) baking dish. Bake at 350ยบ for 35-45 minutes until a
toothpick inserted comes out clean.
Let cool completely after baking. Using the
bottom of a wooden spoon, poke holes all over the top of the cake.
Pour the sweetened condensed milk over the cake,
aiming to fill the holes. Refrigerate for 60 minutes or until the sweetened
condensed milk has soaked into the cake.
Spread the cool whip over top of cake. Sprinkle
on the heath bits, and drizzle caramel over top (just to your liking).
Refrigerate for 3-4 hours, or overnight (best).
This is great with or with out the candy on top!

Jinny's Yummy Pumpkin Bread
(My Beautiful Sister-In-Law's Recipe)
3 cups sugar
1 cup vegetable oil
4 eggs
1 can(16oz) solid pumpkin
3 1/2 cups flour
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp cinnimon
1 tsp nutmeg
1/2 tsp ground clove
1/2 tsp allspice
1/2 cup water
In a large bowl, combine sugar, oil and eggs. Add pumpkin and mix well. Combine ALL dry ingredients; add to the pumpkin mixture alternate with water. Pour into two greased 9in x 5in x 3in loaf pan OR 13x9 pan. Bake at 350 degrees for 60-70 minutes or until bread tests done. Cool.

CROCK POT CANDY
32 oz dry roasted peanuts
12 oz semi sweet chocolate chips
4 oz German sweet chocolate
32 oz white chocolate candy melts
Place ingredients in a crockpot as listed. Do
not stir. Cook on low for 1 1/2 -2 hours - do
not open the lid! After cooked, stir and drop
by spoonfuls on a parchment paper. Allow to
harden and store in a closed
container..
