Lunch

Slice the zucchini in half. Slice off the bottom to keep in stable. Brush with olive oil and top with garlic or garlic powder. Top with sliced tomatoes, salt and pepper to taste. Use mozzarella cheese, Parmesan cheese or mixed blend.. Bake 375 for 20 to 30 minutes until soft.

You can mix it up with whatever you like...Tomatoes would be great too!

         Broccoli Cauliflower Greek Salad

First off Combine:
1 bunch of Broccoli
1 bunch of Cauliflower
8 strips of cooked and crumbled bacon
1/3 C. Chopped Onion
1 C. chopped Tomatoes
2 hard boiled eggs- chopped

Then in a small bowl mix well:
1 C. Miracle Whip
2 Tbsp Vinegar
Salt, Pepper to taste and I like to add in Greek Seasoning its optional..

Add the mixture to the Broccoli and gently toss to cover it all
Refrigerate then serve.. YUMMY



                                                         
 Carbonada Chilean Soup

   Ingredients
1 pound ground beef
1 medium onion chopped
2-3 carrot chopped
2-3 cloves garlic, minced
4 potatoes cubed
1 small butternut squash cubed
1 can of corn
1 can of peas
1 can of green bean
1/2 tablespoon oregano (I put a little more)
1 teaspoon cumin
Salt to taste
2 cubed bouillon
1 cup of cooked rice (with salt)

In a pot brown the ground beef, drain. Then put the ground beef back in the pot and add onion, garlic, oregano, cumin. When the onion is browned, removed from heat and seat aside for at least 5 minutes. (this is really important)
Return to heat and add the potatoes, squash, carrots, bouillon and salt if needed. Cover with boil water. If you are cooking with fresh corn, green bean and peas, add them now. If you're cooking with canned ones, wait until potatoes are tender to add them with cooked rice. Let them cooked for 5 more minutes.
If you're not good cooking rice, you can add as much as uncooked rice as desired with the potatoes and let it cook.
Probably you're gonna need to add more water or salt, so check it often.

Top with cilantro or green onion

Stack everything on top of Cheese and drizzle on the Balsamic vinegar! Enjoy!
